Garam Garam Cha ani kanyachi Bhajji

It's a rainy evening here in Bangalore.. and what else could I possibly dream of other than having "Garma Garam Chai and Onion Bhajji"! Hot hot tea and onion pakoras! Garam Garam Cha ani kanyachi Bhajji !! (Konkani )

Bhajji on a platter

To make Bhajji's:
Ingredients: (Serves 2)
1/2 cup besan
3 small onions/2 medium onions
1/2 tea spn coriander powder or few coriander leaves
1 tea spn chilli powder or 2-3 green chillies
pinch of turmeric
a pinch of cooking soda (optional)
oil for deep frying
salt to taste

Method:
Chop onions into thin slices. Chop the green chillies and coriander finely.

Put the onions in a bowl, add the chillies and coriander. Add the besan powder, turmeric, soda and salt.
Mix well. Add a little water to make a thick batter.
(If the batter becomes too watery then add some more besan.)

Cover the bowl and leave the mixture for 10 mins.

Heat oil in a kadai. Add a drop of the besan mix to the oil to test if the oil has heated up. If the drop does not stick to the bottom of the kadai then the oil is heated enough.
Now take tiny rounds of the onion-besan mix and put in the oil. Fry till they turn brownish. Remove on a paper/tissue roll to absorb the extra oil.

Enjoy by making a sandwich or just with Tomato Sauce and hot cup of Chai!

Chai aur Bhajji Ho Jaay ?

Kurkurit Fov (Crispy Pohe)

A sunday breakfast my mom used to make often!

Fov means Beaten rice in Konkani. Also known as Avalakki in Kannada and Poha in Marathi.

Ingredients:
1 cup flat beaten rice/fov
1/2 cup freshly grated coconut
2-3 green chillies
2 tea spn sugar
oil for deep frying
salt to taste

Method:
Take the coconut in a plate, add green chillies, sugar and salt. Mix well. Cover and keep aside.

Clean the poha ( do not wash in water!).
Heat oil in a Kadai. Put 1/4 of the poha in the oil. Fry till slightly brown. Remove on pan covered with paper. Follow with rest of the poha.

Serving Instruction :Put small amount of the crispy poha in a small bowl. Add 3-4 tbls spn of the coconut mixture on this and mix well.
(Do not mix the coconut and poha. The poha will get moist, hence mix just before serving)

Enjoy a Crispy breakfast :)

Tip: You can fry extra poha and store in a airtight container, if you intend to make this again. Just prepare the coconut mixture and serve!
